Roast pork with apple and mustard glaze

Pork is a meat that often gets overlooked, and it’s usually associated with crackling and pork chops (both of which are delicious!)

Pork is actually a very lean meat, and makes a great alternative to the usual roast chicken and turkey.

The ingredients I’ve used for this recipe can be bought from any supermarket, and it smells delicious when it’s cooking!



Pork loin

2 apples quartered

2 onions quartered

2 tbsp apple cider vinegar

1 tbsp whole grain mustard

1 tbsp fresh sage, chopped

108ml apple juice



Preheat the oven to 180 degrees.

In a roasting tray, place the pork and arrange the onions and apples around and underneath. Season everything with salt and pepper.

In a small bowl, combine the apple cider vinegar, mustard, apple juice and sage and mix well.

Pour the glaze over the pork and cover with foil – cook for one hour.

Take the foil off, and cook for a further 20 mins until nice and browned!
