Paleo Millionaire Shortbread

This paleo millionaire shortbread recipe is fruit free; no dates, raisins, purée etc.

I have used coconut palm sugar which contains a fibre called inulin which slows glucose absorption.

Coconut sugar also has a good nutrient profile compared to other natural sugars, however… it is not a substitute for other real whole foods. Just because it is a healthier alternative, it should still be used sparingly!

Shortbread layer:

1 cup of buckwheat flour

1/2 cup coconut sugar

1/2 cup melted coconut oil

1 tsp vanilla essence

Caramel layer:

1/4 cup coconut sugar

1/4 cup melted coconut oil

1/4 cup smooth almond/peanut/cashew butter

1tsp vanilla extract

a pinch of salt

Chocolate layer:

1/2 cup coconut oil

1/2 cup cacao powder

3-4 tbsp coconut sugar (to your preference)

1tsp vanilla extract

pinch of salt



1. To make the shortbread, combine the flour, melted coconut oil, sugar, and vanilla in a small bowl. Press the mixture into a lined baking tray and set aside.

2. To make the caramel, combine the caramel ingredients in a pot on a low heat until everything is melted and combine. Allow to cool slightly before pouring on the shortbread layer, and then leave in the fridge to set.

3. Wait 30-60 mins before adding the chocolate layer otherwise you won’t get distinctive layers!!

4. Make the chocolate layer by melting the coconut oil in a pot and then adding the remaining ingredients, making sure it is smooth with no lumps. Pour over the caramel layer and leave in the fridge to set.

5. Slice and Serve!
