Store-Cupboard Snacks

 

There are often times when hunger strikes, and I haven’t got a perfect and nutritionally balanced protein ball – shocking, I know.

Out of convenience, I came up with these go-to recipes. They require minimal cooking, are cheap to make and rich in all the good stuff.

 

 

Artichoke Heart Vinaigrette

1 jar/tin artichoke hearts, drained and rinsed

Olive oil

Vinegar

Fresh or dried parsely

Squeeze of lemon

Really healthy, quick and easy to prepare and will top up your energy levels just enough until dinner.

 

Miso Soup

1 heaped tbsp miso paste

1-2cups water

Dried seaweed (nori, wakame, kelp all do well)

Feel free to add tofu, leafy vegetables, mushrooms etc to make it more substantial

TIP – Pret serves takeaway miso soup, and itsu sell miso paste sachets to add to hot water. Ideal when you need a little oomph when out and about.

 

 

Fuss-free fudge

4 tbsp coconut oil

2 tbsp cacao

Honey/Coconut Nectar to taste – personally I like it without.

Whizz in a food processor or in a bowl et voila.

TIP – Also great for offering guests after a meal, using a 2:1 ratio of coconut oil to cacao powder.
