Carrot and Walnut Loaf

This carrot cake recipe is super easy to prepare, and you’re likely to have all the ingredients on hand. Oats add extra nutrition to this veggie based loaf, and you can adjust the amount of sweetener to your taste. Enjoy with a nice cuppa.




1/2 cup oats

1/2 cup water

1/4 cup butter

3/4 cup buckwheat/whole wheat flour

1/4 tsp salt

1 teaspoon baking powder

1/3 cup coconut sugar/soft brown sugar

2 eggs

4 large carrots grated

1/2 cup walnuts

1 1/2 tsp cinnamon



Preheat oven to 180 degrees and line or grease a loaf tin.

In a small bowl, combine the oats and water and allow to soak for 10 minutes until the water is absorbed.

In a separate bowl, whisk the eggs, sugar and butter. Add the oat mixture and stir until combined. Then add the flour, salt, baking powder and cinnamon and mix well.

Fold the grated carrots and chopped walnuts so evenly distributed.

Bake for 40-60 minutes, until cooked through and the edges spring from the tin.
