Chocolate and orange is a great combination, and always reminds me of Christmas time, so these are perfect to get you in the mood!
There is no dairy, gluten or refined sugar in these cookies, they have a wonderful crunch from the walnuts as well as a hint of orange. Yum!
130g melted coconut oil
200g coconut sugar
200g oat flour or buckwheat flour
1 tsp baking powder
22g raw cacao powder
Zest of 1 orange
1 handful of walnuts
Preheat oven to 180 degrees and line a tray with baking paper.
Cream the coconut oil and sugar until fully combined and creamy. Add the egg and whisk.
Add the flour and baking powder slowly, so the mixture doesn’t fly out of the bowl! Once mixed, add the cacao and orange zest.
Mix well, and then stir in the chopped walnuts so they are evenly distributed.
Form into round balls and slightly flatten onto the baking tray.
Cook for about 10-12 mins, and allow to cool slightly before leave to rest on a wire rack!
